REPORTS TO: Director of Operators

SUPERVISES: Guest Service Supervisor, Kitchen Supervisor, Cooks, Prep Staff, Front of House Staff, Upscale Food Truck Staff, Catering Staff

MINIMUM QUALIFICATIONS:

o High school diploma or GED required

o Bachelor’s degree from an accredited educational institution with a concentration in Business Management, Hospitality or Restaurant management or equivalent hands-on work experience.

o Five years progressive food and beverage management experience

o SERVESAFE certified

Must demonstrate the following essential knowledge and skills:

o Strong communication, supervisory, coaching, and organizational skills are required

o Proficient in the use of Windows based office software including but not limited to Microsoft Office, Word, Excel, PowerPoint, and Outlook

o Strong interpersonal skills

o Neat, professional appearance with excellent personal hygiene

o Knowledge of all phases of food and beverage department with an emphasis on back of the house.

o Food Service, Kitchen, Food and Beverage Administration, Catering and Events with emphasis on back of the house– 5 years (Required)

o Food and Beverage Management: 5 years (Required)

o Strong Operational Experience (Required)

o Back of House Experience (Required)

JOB SUMMARY:

Strong, talented working Food and Beverage Manager with the ability to develop exciting food and beverage ambiance, provide a strong guest service environment while attracting and retaining guests. Responsible for the operating success of the Food and Beverage and Retail Departments of the Company. Oversee operation, management, budgets, and all areas of food and beverage for the company.

Elevate quality of products and services for consistent high-level experience throughout the property by strategically identifying opportunities for improvement and quickly executing needed change.

JOB ESSENTIAL DUTIES AND RESPONSIBILITIES:

Endorse the business objectives, ethics, and values of stayNantahala in accordance with the Code of Commitment and Mission, Vision, and Values of the Company.

Ensure the quality and profitability of all outlets through the establishment of policies, procedures, and operational standards. Maintain cost control in cost of goods, supplies and labor.

Develop department goals that are achievable with positive reinforcement management style

Develop business plans that support the property plan including initiatives for food and beverage quality, service and profitability, employee development and retention strategies, employee productivity benchmarks, management succession planning and business growth

Establish specifications and standards for all products and services

Use property forecasts to establish levels of food production and guest service

Analyze and evaluate food and beverage profit and loss statements and determine alternative courses of action if necessary

Implement and audit inventory and cost control systems and procedures

Prepare, review, and submit of operating and capital budgets

Develop and implement projects, programs, and systems designed to improve department operations and service delivery

Work with all Department Heads to ensure that all revenue is captured and reported in an accurate manner

Actively involved with Planning & Analysis of department to maximize guest and staff service, profitability and efficiency

Develop & utilize systems and reports to understand and identify revenue/efficiency opportunities

Engage Team Members to create exciting programs that improve service program scores, communicating results to team weekly, focusing on continuous improvement

Solicit and respond to guest feedback gathered by direct interaction, comment cards, and service program scores

Maintain a neat, clean, organized, safe and comfortable work environment for guests and Team members

Oversee departmental training programs; coach, reinforces and lead personnel in the proper performance of their duties

Maintain compliance with local fire and health regulations, and maintains knowledge of emergency procedures enabling the issuance of instructions to employees and guests if necessary

Lead the department by creating a positive, supportive environment where talents, skills, and trade practices are exchanged, practiced, and enhanced

Set performance expectations and provide coaching, career development planning and operational support for all departmental managers

Exhibit sound decision-making with emphasis on motivating team and maintaining high morale

Participative member of the management team by volunteering and being involved with projects, committees, and task forces by providing input and suggestions

Responsible for, or actively participates in, the initiation of personnel actions including but not limited to interviews, training, candidate selection, terminations, performance reviews, promotions, transfers and disciplinary actions

Provide continuous positive coaching for development of employees and appropriate corrective action when necessary. Ensure timely and accurate performance appraisals and accurate work history entries

Ensure proper cash handling procedures

Lead an organization with methods and actions that are ethical and in full compliance with all applicable laws, regulations, and Company policies

Identify compliance risks and take actions necessary to eliminate or minimize risks

Champion, within the organization, a commitment to honesty, integrity, and responsible corporate behavior

Create a compliance culture within the organization and foster an environment where employees feel comfortable reporting potential violations or misconduct

Ability to uphold and demonstrate the highest level of integrity in all situations and recognize standards required by a regulated business

Adhere to regulatory, departmental and company policies and internal controls in an ethical manner

JOB DEMANDS:

Must be able to respond calmly and make rational decisions when handling employee and/or guest demands in a fast-paced environment

Ability to work and handle multiple priorities in a fast-paced environment

Must have the manual dexterity and coordination to operate office equipment, including computers, fax machine and photo copier

Must be able to lift up to 25 pounds and carry 5 pounds

Must be able to respond to visual and aural cues

Must be able to read, write, speak, and understand English

Must be able to be on feet for 10-12 hours per day

Must be able to work a flexible schedule including weekends, evenings, and holidays

Pay: $45,000.00 - $55,000.00 per year
